A super healthy and tasty dip made with black beans, corn, avocados, green onions, fresh cilantro, and a lime dressing. It’s a crowd pleasing appetizer, and it’s vegan! —Dash of Amy

Ingredients
- Salsa
16 ounces
can black beans, drained and rinsed
16 ounces
can corn, strained

tomato, finely chopped
1
avocado, diced
1
bunch green onions, sliced
1
bunch fresh cilantro, finely chopped
- Dressing
1/2 cup
olive oil (light for milder flavor)
1/3 cup
fresh lime juice (about 2 limes)
1 teaspoon
salt
1/2 teaspoon
black pepper
5-8
dashes Frank’s red hot sauce
Directions
- Salsa
- Combine all ingredients in a large bowl and mix.
- Dressing
- Whisk together all the dressing ingredients until it thickens, and pour over the salsa.
- Refrigerate for at least one hour before serving.
